Changing up the meatloaf game with this amazing bacon vs beef grind from @porterroad. Here is the recipe which I think even #ketofriendly folks would enjoy.
Minced up my quadtrinity i.e. red, green bell peppers, white onion(2 tbs each) and garlic (1tsp), started with garlic in tsp of EVOO then added the peppers and onions on med-high stirring until reduce down
then cool for about 5 minutes. Then began with the following mixture:
2 lbs of beef vs bacon from Porter road
Throw in the quandtrinity – diced and cooked red, green bell peppers, white onion minced garlic
Add one egg
1/3 cup of fresh shredded parmesan
Then fold meat loaf until mixed thoroughly
1 pack of Mcmormick meat loaf seasoning, add in half packet, then fold meat loaf until mixed then add 3 tbs of worchester sauce and then fold in second half of seasoning packet until all is mixed thoroughly. Preheat oven to 400. Then 1/2 tbs of butter to cover entire bottom and sides of loaf pan. Then form meatloaf into pan and place in oven. *Note you will need to drain pan of juices about 30 minutes in and I usually take out once internal temp reached 150 to add layer of Ketchup to the top and put back into oven to reach internal temp of 160. This batch was served with freshly whipped mashed potatoes but you can also use mashed cauliflower as that works great too!
