So got a little creative and decided to make some crazy style ribs starting with these Bourbon BBQ bacon ribs and let me tell you these did not disappoint. I used honey mustard as binder then dusted in that Caribeque honey heat and let it sit for about 35 minutes while I got the pitbarrel rolling with some kingsford apple wood and some apple wood bricks, then waited for coals to begin get white and checked temp to ensure cooker was around 280. Next I positioned two hooks under second rib bone to hang slab of ribs. Then closed the lid and came back in about 45. Then pulled rack off wrapped in aluminium foil on top of some raw honey, brown sugar and sprayed with some apple juice. With ribs covered I placed back on pitbarrel in grates for about another 25 minutes and then took off and let sit for about 20 minutes to rest before slathering some of that magnificent bourbon BBQ sauce and topping with crushed center cut bacon bits for added flavor!

3/4 cup bourbon – used American Barrel Bourbon for this batch
1 tbs of olive oil
1/2 cup white onion finely minced
1 glove of garlic finely minced
1-1/2 cups of Ketchup
2 tbs of tomatoe paste
2 tbs balasamic vinegar
2 tbs of molasses
1 tbs of worchester
Few dashses of hot sauce
Start with 1 tbs of Olive oil heated in small sauce pan added minced onion and garlic until they reduce then add bourbon and allow that to reduce and then begin to gently add remaining ingredients and mix with hand blender to get smooth. Finally allow to cool before put into container for future use.
