Smoked Turkey Legs

Never watch carnival eats while on an empty stomach it will make you do crazy things like smoke turkey legs in freezing temps, LOL. So had snack attack and decided to cook up some killer turkey legs. Question is do you like yours naked or sauced? I placed these in brine overnight see combination below. Then I patted them dry and rubbed the drummies with some EVOO then rubbed with of that @blackriverbbq cock a doodle rub before smoking on the pitbarrel for about an hour, I started my @pitbarrel cooker and once it reach 250 I put the legs on the cooker. As legs got a nice tan I started to baste a few of the legs with some honey bbq sauce and they were delicious both naked and with sauce! Turkey Leg Brine:
¼ cup of kosher salt
¼ cup of granulated sugar
2 tbs of rub used @blackriver bbq cock a doodle rub
1 tsp of sage
1 tsp of thyme
¼ stick of butter

Combine all ingredients above in sauce of about 2 -1/2 cups of water and bring to boil on stove, then lower temp to simmer until sugar and salt dissolved. Remove from stove let mixture cool, if needed use ice cubes to cool mixture just be careful not to add to much as ice creates more water, LOL. Once mixture is cool poor over top legs in ziplock bag and store in refrigerator for at least 8 hours…longer or overnight preferred. Then take out of back and pat down till dry and then rub with EVOO as binder and gently cover with rub.
