Pear Sausage Cornbread Stuffing

Where are all my pear fans at? Honestly if ever offered me a pear vs apple I will always choose the pear…so with that said I decided to make my own version of pear Sausage stuffing for an even bigger dish and let me tell you it did not disappoint. I still have more to share to include the dish this side was intended for so definitely stay tuned. Also check out story for how this was made for reference.

Pear Sausage Cornbread Stuffing:

Pear pie filling from scratch:
2 Bartlett pears peeled and chopped
1/4 of water
1/3 cup of light brown sugar
1 tsp of nutmeg
1 tbs of cinnamon
2 tbs of cornstarch
1 tbs of butter

Add 1 tbs of butter to skillet until melted then add pears and part of water. Then mix all the dry ingredients in small bowl and gently dispense over the pears as they reduce during cook. Stir until cooked through and mixed into nice pie filling mixture and set off to the side for reintroduction later.

Next use following ingredients to complete stuffing:
1/2 cup of cornbread stuffing mix
2 sweet Italian sausage links removed from casing
3/4 cup of chicken broth
1/2 stick of butter
2 staulks 1/2 cup of celery minced
1/2 of 1/4 cup of fennel bulb minced
1/4 cup of minced white onion

Placed 1/4 of butter sliced in pan, and then added celery, fennel and white onion and cooked till translucent. Then added sausage and cooked until browned. Then began adding the pear pie mixture back in, stirring until mixed. Then started adding some chicken broth and cornbread stuffing mixing and stirring until completely mixed. Once all the ingredients are mixed I added the remainder of the butter in slices and placed skillet in the oven at 350 for about 25 minutes until golden brown and viola there you have it.
